Cilantro Rice | Recipes

RICE WITH CUMIN, CHILIES AND CILANTRO

You have to try this with grilled or roasted meats.

1-2 tablespoons olive oil
½ cup or so chopped onion
1 teaspoon garlic, minced
1 teaspoon cumin
1 cup long grain rice
1 cup corn
2 cups chicken broth, low sodium, defatted

jalapeno chilies, chopped, to taste or sprinkling of red pepper flakes
Handful of chopped cilantro
Salt and pepper to taste

Heat olive oil in pan and add onion, garlic, cumin and rice. Cook until onion is soft but not brown. Add corn and broth. Bring to a boil. Cover and lower to a simmer. Cook for 20 minutes or until rice is tender. Stir in chilies and cilantro. Serves 2-3.
