LAVENDER HONEY

Use light colored honey so the lavender flavor can permeate.

This lavender honey is a wonderful on quick breads and in drinks and as a sugar substitute.

2 cups honey
10-12 sprigs lavender cut into 2” lengths

Simmer honey and lavender together for a few minutes, until fragrant.

Do not let boil.

Remove from heat and let steep until cool.

Strain, and store in sterilized, dry jars (boil jars and lids 15 minutes) in a cool place.

If the lavender honey crystallizes, warm to liquefy.
